This is such an easy recipe – you blend all the ingredients together and then fry in a pan – and filled with some great ingredients. Perfect for breakfast pancakes, or as a great pudding. Add any fruit/toppings you like and enjoy!

- 1/2 cup Rolled Oats
- 1/2 a Banana
- 2 Egg Whites
- 1/4 cup Greek Yoghurt
- 2 tbsp Milk
- 1/2 tsp Baking Powder
- a tbsp Honey optional
- 5 Raspberries optional
- a tbsp Chia Seeds optional
- a tbsp Coconut Oil for frying
Add all of your ingredients to a blender and blend until smooth – 10/20 seconds.
Heat your coconut oil in a pan, once hot pour in about a sixth of your mix.
Wait until you start to see bubbles begin to form on top and the edges look cooked (about 2 minutes) – then gently flip and cook for a further minute.
Repeat with the rest of the mix.
Top with whatever you fancy – I like to use greek yoghurt, berries, and some ground flax/nuts.
