Absolutely packed with great ingredients, these would make brilliant afternoon or post-nursery/school snacks. They have a very soft bake finish (almost cake-like in texture) and so definitely need to cool before eating.

- a tin Kidney Beans drained
- 1/2 cup Almond Butter or nut butter of your choice
- 1/2 cup Honey
- a tsp Baking Powder
- 1/2 Banana
- 2 tbsp Desicated coconut
- 2 tbsp Chia Seeds
- an Apple grated, juice squeezed out (very important step)
Add your kidney beans, almond butter, honey, baking powder and banana to a blender until thick and smooth.
Stir in your apple (excess liquid drained out into sink), coconut and chia seeds.
Line a baking tray with greaseproof paper and spoon the mixture into 10 equally sized circles – it's more of a batter than a dough so you'll need to spoon the mixture on.
Bake at 180C for 15 minutes – use a fork to gently flatten slightly half way.
Due to the cake-like soft-bake finish, these are best cooled completely before eating.
