These are a delicious and fun way to serve some fresh vegetables. You could use whatever fillings you fancy, some mango and chicken would also work well instead of the tuna. Or you could use some gently spiced tofu!

- 4 Rice Paper Sheets I found these in a local health shop, you could also order online
- a small Carrot chopped finely into sticks
- half a Cucumber chopped finely into sticks
- half an Avocado
- a tin Tuna drained
- a tbsp Pesto
- a tbsp Dill fresh and chopped
- a tbsp Greek Yoghurt or mayonnaise
In a small bowl mix your tuna, dill, pesto and yoghurt/mayonnaise.
Place a rice sheet in some warm water for 15 seconds, you want it to soften. Very carefully lift and place on a dry tea towel.
Place some cucumber sticks, carrot and avocado in the centre of the bottom half of the sheet.
Carefully add some of your tuna mix on top.
Roll the sheet over on itself, tuck in the sides and then roll over again to close the sheet – like you would a burrito.
Slice in half and enjoy!
