4 ingredients, and ready in as long as it takes to cook your pasta. Beetroot is packed with vitamins and minerals, protects your liver, is great for digestion and increases brain activity. This is such a simple way to serve it and the beautiful pink colour makes for a fun meal. I serve it with a spelt pasta, but any pasta would work. You could also serve with some sweetcorn, protein of your choice or even use the sauce as a spread on toast!

- 4 Beetroot's cooked, find fresh ones or ones 'in natural juices' rather than ones in vinegar.
- 1/2 cup Cream Cheese I use the Nush chive one, Boursin would also be nice.
- a tbsp Olive Oil
- 400 g Pasta I use a spelt pasta, or a wholewheat one
Add your pasta to boiling water and cook per pack instructions, usually around 10 minutes.
Add your beetroot, cream cheese and olive oil to a blender and blend until smooth.
Drain your pasta, stir in your sauce and enjoy!
