Instructions
Sauté your onion, pepper, celery, sweet potato and garlic with some olive oil over a medium heat.
You want the sweet potatoes to soften, this should take around 10-12 minutes – faster if you cover with a lid. Stir occasionally to prevent sticking/burning.
Add in your spices and stir for a minute, or two.
Add in your kidney beans and mince and stir for a further few minutes before adding your tomato sauce and simmering for around 10 more minutes over a medium/low heat. Season to taste.
Notes
*With heavily tomato-based dishes I will often add a tbsp of honey, or plant-based alternative, to add a sweetness.
