Most children love pizza, but getting them to add vegetables can be tricky. I suggested the idea of pizza rolls and they were excited – we always make pizza's to share and so they have different sections with different toppings to suit. I had a plate with mushrooms, peppers, olives, fresh basil, ham and sweetcorn – this time we spread all of them all over. Once the cheese and toppings were all on we rolled up the pizza, sliced it and baked. The end result is a kind of pizza bun with cheesy toppings concealed on the inside. The perfect way to sneak some extra vegetables in!
1/2cup Tomato Pizza Sauce You could use a pasta sauce, purée or make your own!
acupMozarella
1/4cupChopped Mushrooms
1/4cupSweetcorn
a fewFresh Basil Leaves
a few Sliced Olives
someShredded Ham
Instructions
In a bowl combine your flour and yeast. Add in your warm water and olive oil. Mix until you have a sticky dough and all the flour is incorporated. Cover with a tea towel and set aside for 2-6 hours.
On a large piece of baking paper sprinkle a generous amount of plain flour. Tip the dough on top and sprinkle with a little more flour. Roll out until you have a cm thick rectangular shape.
Cover with the tomato sauce – leaving an inch clear along one of the longer sides.
Sprinkle your mozzarella over evenly.
Top with the remaining chosen ingredients.
Roll one of the longer sides over on itself and gently roll towards the edge with the inch clear. You can use the paper to help with the rolling.
Slice the inch in to eight pieces. Lay these on the baking paper and place this on an oven tray.
Bake in a preheated oven at 200C for 12-15 minutes. Lower the oven if they brown too fast or start to burn.
Notes
You can add or remove whatever toppings you’d like. Roasted vegetables would work well, you could add tuna, or even some plant-based cheese and nutritional yeast!
