These are so easy and quick to make, also a great one to make if your kids want to get involved too. I find it easiest to quickly measure everything out first and then they can simply pour into the bowl and mix. I also love that they are green, I find kids can be so quick to disregard green foods and so a great way to keep the colour on their plate. They'd make a good filling snack, or you could serve on the plate along with other foods. They had these ones along with their chicken pot roast. You could also very easily grate in some broccoli or other veg to these.

- 250 g Brown Self Raising Flour or white
- 80 g Parmesan Cheese Grated
- 4 tbsp Pesto
- 2 Eggs
- 50 g Butter melted
- 190 ml Milk
In a large bowl mix together your flour, parmesan and pesto.
Pour in your eggs, melted butter and milk.
Gently fold together.
Pour into muffin cases or a silicone muffin tray.
Bake in a preheated oven at 180C for 20 minutes.
Allow to cool before eating and enjoy!
