This is such a simple meal to make, and so delicious. It can also be very versatile, instead of chicken you could use prawns, vegetables or some tofu. It's a nice warming dish with a real comfort feel, but could also be served cooler with some yoghurt on warmer days.
- a cup Basmati Rice
- a tsp Turmeric
- half an Onion finely diced
- a Garlic Clove crushed or finely diced
- a Bay Leaf
- 3 Cardamom Pods
- a Cinnamon Stick or a tsp of Ground Cinnamon
- a tsp Ground Cloves
- a tsp Ground Cumin
- a tsp Ground Coriander
- 3 tbsp Tomato Purée
- 200 ml Coconut Cream
- 2 Chicken Breasts Chopped
- Plain Yoghurt
Boil your rice in a cup and a half of water for 15-20 minutes, or per pack instructions. Once cooked drain and stir in a tsp of turmeric and a tbsp of butter. — You can do the next steps while the rice is cooking.
Add your onion to a lidded pan along with the garlic, and all of your spices. Cook over a medium heat for 2 minutes.
Add in your coconut cream and tomato purée and stir.
Add in your chicken and stir until cooked through. You can use the spoon to break down your chicken further.
Reduce to a low heat and add your rice to the top of the chicken. Cover with the lid and leave for 10-15 minutes.
Serve with some yoghurt and enjoy!
