Salmon with a gentle jerk and garlic flavour served with a bulked out creamy pesto mash

Ingredients
  

  • 2 Sweet Potatoes
  • 6 White Potatoes medium
  • 2 tbsp Pesto
  • 1 Egg
  • a handful Spring Onions chopped
  • a dollop Cream Cheese
  • 1 tbsp olive oil extra virgin
  • 3 Skinless Salmon Fillets
  • a pinch Dried Rosemary
  • 2 tsp Jerk Spice
  • 2 cloves Garlic crushed
  • a squeeze Tomato Puree

Instructions
 

  • Peel your potatoes and slice each one in to four. Bring a pan of water to the boil and add these until soft and ready to mash. Once drained and mashed, add your cream cheese, spring onions, pesto and egg. Stir until combined over a gentle heat, 1-2 minutes.
  • Pan fry your salmon fillets with the olive oil and rosemary. Once the fillets are cooked through, 3-4 minutes per side, use a spatula to break them into small pieces. Add your jerk seasoning, tomato puree and crushed garlic, continue cooking for a further 3-4 minutes over a medium heat. Allow to cool before serving.

Notes

Depending on your Childs taste and age, you could alter the spice quantity for strength of flavour. This is best served with some veg on the side, we went for cucumber sticks. If your child is over the age of 1, I find adding the tiniest bit of honey to new flavours/colours a great way of introducing them - they tend to welcome sweetness more readily. Here this would work well with the salmon and jerk spice.
