This is such a simple meal to make, and so delicious. It can also be very versatile, instead of chicken you could use prawns, vegetables or some tofu. It's a nice warming dish with a real comfort feel, but could also be served cooler with some yoghurt on warmer days.

Ingredients
  

  • a cup Basmati Rice
  • a tsp Turmeric
  • half an Onion finely diced
  • a Garlic Clove crushed or finely diced
  • a Bay Leaf
  • 3 Cardamom Pods
  • a Cinnamon Stick or a tsp of Ground Cinnamon
  • a tsp Ground Cloves
  • a tsp Ground Cumin
  • a tsp Ground Coriander
  • 3 tbsp Tomato Purée
  • 200 ml Coconut Cream
  • 2 Chicken Breasts Chopped
  • Plain Yoghurt

Instructions
 

  • Boil your rice in a cup and a half of water for 15-20 minutes, or per pack instructions. Once cooked drain and stir in a tsp of turmeric and a tbsp of butter. -- You can do the next steps while the rice is cooking.
  • Add your onion to a lidded pan along with the garlic, and all of your spices. Cook over a medium heat for 2 minutes.
  • Add in your coconut cream and tomato purée and stir.
  • Add in your chicken and stir until cooked through. You can use the spoon to break down your chicken further.
  • Reduce to a low heat and add your rice to the top of the chicken. Cover with the lid and leave for 10-15 minutes.
  • Serve with some yoghurt and enjoy!
