Sauté your onion and leek with some olive oil for around 5-7 minutes, or until softened.
Add a cup of milk, your cod and two bay leaves. Cover the pan and continue to cook for a further 5 minutes.
Add your spices and stir. Drain your rice and add to the mixture, ensure its well mixed.
Season to taste, you can also stir through some cream cheese and serve with a boiled egg.
Notes
I find the cream cheese a great addition – stirred through at the end, and to keep it traditional a boiled egg or some fresh coriander would also go perfectly!
