You can find the recipe steps in my Instagram highlights, but this super quick and simple meal is always a success.

Ingredients
  

  • a cup Brown Rice
  • an Onion diced
  • a Leek diced
  • a cup Milk
  • 2 Cod Loins
  • 2 Bay Leaves
  • 2 tsp Ground Turmeric
  • 2 tsp Ground Coriander
  • 4 tsp Mild Curry Powder
  • a tbsp Cream Cheese optional
  • a Boiled Egg optional

Instructions
 

  • Boil your rice until cooked, around 20 minutes. 
  • Sauté your onion and leek with some olive oil for around 5-7 minutes, or until softened. 
  • Add a cup of milk, your cod and two bay leaves. Cover the pan and continue to cook for a further 5 minutes. 
  • Add your spices and stir. Drain your rice and add to the mixture, ensure its well mixed. 
  • Season to taste, you can also stir through some cream cheese and serve with a boiled egg. 

Notes

I find the cream cheese a great addition - stirred through at the end, and to keep it traditional a boiled egg or some fresh coriander would also go perfectly!
