Healthy Spiced Apple Muffins

Very quick and easy to make, and a great filling snack. You could also add raisins, or some grated carrot if you wanted.

Oats

Baking Powder

Bicarbonate of Soda

Ground Cinnamon

Ground Nutmeg

Ground Ginger

Eggs

cup
Honey
1/4
cup
Coconut Oil
melted
1/3
cup
Milk
dairy or nut milk

Apples
grated
Instructions
In a bowl whisk together the eggs, honey, milk and melted coconut oil.
In a blender pulse your oats until they resemble flour. Add the baking powder, bicarbonate of soda and spices and pulse once more.
Combine the dry ingredients with the wet ones.
Squeeze your grated apple over the sink to remove any excess water and then add the apple to your mix.
Divide between your muffin cases (or a greased muffin tray), and bake in a preheated oven at 170C for 20 minutes.
Notes
Half a cup of raisins or some nuts would make a great addition.
