Very quick and easy to make, and a great filling snack. You could also add raisins, or some grated carrot if you wanted.

Ingredients
  

  • 200 g Oats
  • a tsp Baking Powder
  • a tsp Bicarbonate of Soda
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Ground Ginger
  • 2 Eggs
  • 1/3 cup Honey
  • 1/4 cup Coconut Oil melted
  • 1/3 cup Milk dairy or nut milk
  • 3 Apples grated

Instructions
 

  • In a bowl whisk together the eggs, honey, milk and melted coconut oil.
  • In a blender pulse your oats until they resemble flour. Add the baking powder, bicarbonate of soda and spices and pulse once more.
  • Combine the dry ingredients with the wet ones.
  • Squeeze your grated apple over the sink to remove any excess water and then add the apple to your mix.
  • Divide between your muffin cases (or a greased muffin tray), and bake in a preheated oven at 170C for 20 minutes.

Notes

Half a cup of raisins or some nuts would make a great addition.
