Toasted cheese sandwiches are always so quick to make and and a guaranteed winner. You can very easily switch up the inside of the sandwich to suit preferences and they're also a great way to sneak in some ingredients.

- 4 slices Bread I like to use seeded bread, you can also so easily find sliced sourdough in most supermarkets.
- a tbsp Butter or olive oil
- 2 slices Cheddar or more to fit side of bread
- a tbsp Pesto
- an Avocado mashed
Spread your pesto and mashed avocado on to two of the slices of bread.
Top with the cheddar and place the other slices of bread on top to form two sandwiches.
Put a 1/2 of your butter into a frying pan over a low heat and melt. Place the two sandwiches next to each other. After 2-3 minutes add the remaining butter and turn the sandwiches over for a further few minutes.
You want the outsides to turn a nice golden colour and the cheese to be melted inside.
