A delicious and easy to make autumn meal

Ingredients
  

  • a Butternut Squash Peeled and diced
  • a splash Olive Oil
  • 2 handfuls Mushrooms Diced
  • a knob Butter
  • 3 cloves Garlic Crushed
  • a tbsp Nutritional Yeast
  • a cup Buckwheat Rinsed
  • 500 g Chicken Mince
  • an Apple grated
  • an Onion grated

Instructions
 

  • Peel and dice your butternut squash, cover this with the olive oil and rosemary and bake at 180C for 35 minutes.
  • Sauté your mushrooms, garlic, butter and nutritional yeast over a medium/low heat for 10 minutes. 
  • Add the buckwheat and 1 1/4 cups of water. Continue to cook for 10 minutes until soft and thick. 
  • Mix your mince, apple and onion. Shape into balls and fry for a few minutes per side. 
  • Add to a tray and finish at 180C for 20 minutes.
