Beat together your eggs, milk, flour and baking powder.
Grate your carrots and add, drain your sweetcorn and add too.
Stir in your spices. These can be adjusted to be milder or more flavourful.
Place a frying pan with the oil over a medium heat.
Use a spoon to add a dollop – roughly the equivalent of two tbsp-ish.
After 2 minutes gently flip and cook for a further few minutes, depending on how thick they are. You want them to turn a nice golden brown and be cooked through. They should end up like a thick pancake.
Repeat for the rest of your mixture and serve!
