These are my go-to last-minute meal accompaniment. They can be ready in just a few minutes and are always so popular.

Ingredients
  

  • 2 Eggs
  • 1/2 cup Plain or Spelt Flour
  • a tsp Baking Powder
  • a tbsp Milk
  • 2 Carrots grated
  • a tin Sweetcorn drained (160g ish)
  • a tsp Ground Cumin
  • a tsp Ground Coriander
  • a tsp Sunflower Oil

Instructions
 

  • Beat together your eggs, milk, flour and baking powder.
  • Grate your carrots and add, drain your sweetcorn and add too.
  • Stir in your spices. These can be adjusted to be milder or more flavourful.
  • Place a frying pan with the oil over a medium heat.
  • Use a spoon to add a dollop - roughly the equivalent of two tbsp-ish.
  • After 2 minutes gently flip and cook for a further few minutes, depending on how thick they are. You want them to turn a nice golden brown and be cooked through. They should end up like a thick pancake.
  • Repeat for the rest of your mixture and serve!
