A delicious and easy way to use up leftover fruit at the end of the week, and a great treat that can easily be frozen in portions! As you can see we use a bit of a mix of fruit, but anything would work: some sliced apple or pear, banana, sliced strawberries, any other berries. figs, mango etc… We added about a cup of diced fruit all together.

- 120 g Butter softened
- 120 g Caster Sugar or coconut sugar
- 2 Eggs beaten
- 120 g Self Raising Flour I like to use wholemeal
- 1.5 tsp Baking Powder
- a tbsp Chia Seeds optional
- an Apple finely sliced
- a fig diced
- a handful Raspberries
- a Banana mashed
- 2 tbsp Mango diced
Combine the butter and sugar in a bowl until smooth.
Add in your eggs, once smooth stir in your flour and baking powder.
Mix in your chia seeds and fruit.
Line a baking tray with baking paper, and pour in your mix (a tray that will make around 9 smallish squares).
Bake in a preheated oven at 170C for 50 minutes, or until firm to touch and a knife comes out clean. If you press down in the centre it should spring back up!
Allow to cool before slicing!
