A delicious and easy way to use up leftover fruit at the end of the week, and a great treat that can easily be frozen in portions! As you can see we use a bit of a mix of fruit, but anything would work: some sliced apple or pear, banana, sliced strawberries, any other berries. figs, mango etc... We added about a cup of diced fruit all together.

Ingredients
  

  • 120 g Butter softened
  • 120 g Caster Sugar or coconut sugar
  • 2 Eggs beaten
  • 120 g Self Raising Flour I like to use wholemeal
  • 1.5 tsp Baking Powder
  • a tbsp Chia Seeds optional
  • an Apple finely sliced
  • a fig diced
  • a handful Raspberries
  • a Banana mashed
  • 2 tbsp Mango diced

Instructions
 

  • Combine the butter and sugar in a bowl until smooth.
  • Add in your eggs, once smooth stir in your flour and baking powder.
  • Mix in your chia seeds and fruit.
  • Line a baking tray with baking paper, and pour in your mix (a tray that will make around 9 smallish squares).
  • Bake in a preheated oven at 170C for 50 minutes, or until firm to touch and a knife comes out clean. If you press down in the centre it should spring back up!
  • Allow to cool before slicing!
