I've come across this recipe so many times in the past and in countless instagram/tiktok vidoes with slight variations. Here is the one I followed – and it truly was incredible!
Prep Time 15 minutes mins
- 500 g Fusilli (or 4 portions of a pasta you have to hand)
- a medium Red Onion finely diced
- 5 Garlic Cloves diced
- 2 tbsp Olive Oil
- half cup Tomato Paste or around half a tube of it
- a good glug Vodka around a shot or two's worth
- a cup Double Cream
- 2 dried Kashmiri Chillies diced or, a tsp chilli flakes
- a tbsp Butter
- 1/4 cup Grated Parmesan
Bring your pasta to the boil and cook until for as long as the pack suggests – around 10 minutes.
To a frying add your diced onion, garlic and olive oil. Stir over a medium heat until soft – around 5 minutes.
Add in your tomato paste and stir until it looks caremelised for a few minutes. Add in your vodka until evaporated and combined.
Stir in your cream and keep stirring for a couple of minutes, and until well combined. Add in your diced chilli or chilli flakes. Add in your butter and stir.
Drain your pasta and add to the sauce. Season to taste with salt and black pepper.
Top with some parmesan and enjoy!
