I've come across this recipe so many times in the past and in countless instagram/tiktok vidoes with slight variations. Here is the one I followed - and it truly was incredible!

Ingredients
  

  • 500 g Fusilli (or 4 portions of a pasta you have to hand)
  • a medium Red Onion finely diced
  • 5 Garlic Cloves diced
  • 2 tbsp Olive Oil
  • half cup Tomato Paste or around half a tube of it
  • a good glug Vodka around a shot or two's worth
  • a cup Double Cream
  • 2 dried Kashmiri Chillies diced or, a tsp chilli flakes
  • a tbsp Butter
  • 1/4 cup Grated Parmesan

Instructions
 

  • Bring your pasta to the boil and cook until for as long as the pack suggests - around 10 minutes.
  • To a frying add your diced onion, garlic and olive oil. Stir over a medium heat until soft - around 5 minutes.
  • Add in your tomato paste and stir until it looks caremelised for a few minutes. Add in your vodka until evaporated and combined.
  • Stir in your cream and keep stirring for a couple of minutes, and until well combined. Add in your diced chilli or chilli flakes. Add in your butter and stir.
  • Drain your pasta and add to the sauce. Season to taste with salt and black pepper.
  • Top with some parmesan and enjoy!
