Super easy to make, delicous and a colourful snack or addition to a main meal!
- 2 Eggs
- 50 g Spelt, Plain or Wholemeal Flour
- a tbsp Milk or dairy free
- a handful drained Sweetcorn
- 1/2 a Sweet Red Pepper finely diced
- 1/2 a Carrot either steamed and diced, or finely grated
Whisk together your flour, milk and eggs.
Add in your carrot, pepper and sweetcorn. Sitr to combine. (Add your cumin if using).
Heat some vegetable oil in a pan over a medium heat.
Place a spoonful in the pan, turn after 2 minutes. If they brown too much, lower the heat.
Depending on the size of you pan, you could make a few at a time.
Repeat until you've used up all the mixture. Allow to cool, enjoy!
