Super easy to make, delicous and a colourful snack or addition to a main meal!
Servings 10 Fritters

Ingredients
  

  • 2 Eggs
  • 50 g Spelt, Plain or Wholemeal Flour
  • a tbsp Milk or dairy free
  • a handful drained Sweetcorn
  • 1/2 a Sweet Red Pepper finely diced
  • 1/2 a Carrot either steamed and diced, or finely grated

Optional

  • 1/2 tsp Ground Cumin

Instructions
 

  • Whisk together your flour, milk and eggs.
  • Add in your carrot, pepper and sweetcorn. Sitr to combine. (Add your cumin if using).
  • Heat some vegetable oil in a pan over a medium heat.
  • Place a spoonful in the pan, turn after 2 minutes. If they brown too much, lower the heat.
  • Depending on the size of you pan, you could make a few at a time.
  • Repeat until you've used up all the mixture. Allow to cool, enjoy!
