One of my favourite cookie combinations has always been apricot and coconut, so this week we set out to make a health(ier) take on a granola-style cookie. Cookies are meant to be a delicious treat snack, so i didn't want to detract from that – but with some added chia seeds, plenty of oats and by switching the refined sugar for a coconut sugar and honey mix, I think we achieved that. The use of whole ingredients, some great dietary fibre and a good amount of protein, carbs and fat make a convenient on-the-go snack, and also an easy one for children to help you make.

- 125 g Plain Flour
- a tsp Ground Cinnamon
- 1/2 tsp Bicarbonate of Soda
- 160 g Rolled Oats
- 110 g Butter softened
- 100 g Coconut Sugar
- 80 g Honey
- an Egg
- a tsp Vanilla Extract
- a handful Raisins
- a handful Chopped Dried Apricot
- a handful Desiccated Coconut
- a tbsp Chia Seeds
In a bowl combine your flour, cinnamon, bicarbonate of soda, and oats. Set to one side.
In a separate bowl whisk together your butter, sugar, honey, vanilla and egg.
Combine the two bowls together. Stir in your chia seeds, raisins, apricot and coconut.
Refrigerate the mix for 30 minutes – you can do this in its bowl or roll into a sausage and wrap in clingfilm.
Slice/shape the mixture into 12 equal cookie shapes.
Bake in a preheated oven at 180C for 15 minutes – depending on whether you prefer them chewier or harder. Allow to cool and set before eating!
