One of my favourite cookie combinations has always been apricot and coconut, so this week we set out to make a health(ier) take on a granola-style cookie. Cookies are meant to be a delicious treat snack, so i didn't want to detract from that - but with some added chia seeds, plenty of oats and by switching the refined sugar for a coconut sugar and honey mix, I think we achieved that. The use of whole ingredients, some great dietary fibre and a good amount of protein, carbs and fat make a convenient on-the-go snack, and also an easy one for children to help you make.
