These are pretty much the ultimate muffins. They're delicious and so wonderfully balanced with lots of great ingredients. They take just a few minutes to prepare and are perfect for puddings, snacks or on-the-go treats. They'd also do well as a breakfast too!

- 50 g Apple Sauce
- 150 g Greek Yoghurt could use dairy-free
- 50 ml Rapeseed or Coconut Oil
- 2 Eggs
- a Banana mashed
- 5 tbsp Honey
- 200 g Spelt Flour
- 55 g Rolled Oats
- 1.5 tsp Baking Powder
- 1.5 tsp Bicarbonate of Soda
- 2 tsp Ground Cinnamon
- 100 g Blueberries could use raspberries
In a bowl mix together your yoghurt, oil, eggs, banana, honey and apple sauce.
In a separate bowl combine your flour, oats, baking powder, bicarbonate of soda, cinnamon and blueberries.
Stir together the contents of the two bowls.
Divide the mixture between 10 muffin cases or into a silicone muffin tray.
Bake in a preheated oven at 170C for 25 minutes.
Allow to cool and enjoy!
