These are pretty much the ultimate muffins. They're delicious and so wonderfully balanced with lots of great ingredients. They take just a few minutes to prepare and are perfect for puddings, snacks or on-the-go treats. They'd also do well as a breakfast too!

Ingredients
  

  • 50 g Apple Sauce
  • 150 g Greek Yoghurt could use dairy-free
  • 50 ml Rapeseed or Coconut Oil
  • 2 Eggs
  • a Banana mashed
  • 5 tbsp Honey
  • 200 g Spelt Flour
  • 55 g Rolled Oats
  • 1.5 tsp Baking Powder
  • 1.5 tsp Bicarbonate of Soda
  • 2 tsp Ground Cinnamon
  • 100 g Blueberries could use raspberries

Instructions
 

  • In a bowl mix together your yoghurt, oil, eggs, banana, honey and apple sauce.
  • In a separate bowl combine your flour, oats, baking powder, bicarbonate of soda, cinnamon and blueberries.
  • Stir together the contents of the two bowls.
  • Divide the mixture between 10 muffin cases or into a silicone muffin tray.
  • Bake in a preheated oven at 170C for 25 minutes.
  • Allow to cool and enjoy!
