Ready in 10 minutes, this a delcious filling and balanced addtion to your families meals. A little pinch of chilli flakes added to the grownup portions goes great with this!
- 2 Garlic Cloves diced/crushed
- a Red Onion finely diced
- 2 Sweet Red Peppers finely diced
- a tbsp Olive Oil
- 1/2 cup Diced Cherry Tomatoes or 3 tbsp Tomato Puree
- 450 g Pumpkin Gnocchi (or regular) I buy the fresh ones, but if you use a different type – cook as per pack instructions and drain first!
- 3 tbsp Cream Cheese dairy free works too, I love to use the Nush chive almond one
- 2 tbsp Grated Parmesan
Add your olive oil, garlic, peppers and onion to a pan over a medium heat. Stir for 5-6 minutes until they begin to soften. If you're adding fresh tomatoes, add these at this point too. Alternatively, if using tomato puree, add after the onion and peppers are softened.
Add in your fresh gnocchi (or other cooked as per instruction) to the pan and stir for a further 3 minutes stirring occasionally.
Stir in your cream cheese and remove from the heat.
Top with some grated parmesan and enjoy!
