Pancakes are always a great recipe and meal to have up your sleeve. Whatever the meal you'll more than likely have the ingredients to hand and you can easily adapt to savoury or sweet. These banana ones are great as a more bulky desert where you're wanting your child to eat that little bit more. You could top with yoghurt, ice cream, fruit, honey, etc.

Ingredients
  

  • a Banana mashed
  • 2 Eggs
  • 2 tbsp Self Raising Flour
  • a tbsp Milk I use nut milk
  • a tsp Coconut Oil

Instructions
 

  • Begin by mashing your banana thoroughly and whisking in your two eggs.
  • Next, add in your flour and milk and mix until combined to a smooth batter - banana lumps are ok. Add a pan with some coconut oil (or vegetable oil/butter) to a medium heat.
  • Add a heaped spoon of your batter to the pan and cook for 2-3 minutes before gently flipping for a further 2 minutes. If they begin to brown too much lower your heat.

Notes

These could easily have chia, flax, berries etc added to them, and be topped with a range of different things - depending on taste and/or nutritional requirements.
