A quick crowd-pleasing lunch with some hidden spinach

- 4 slices Bread
- a handful Spinach Leaves washed
- a large dollop Cream Cheese
- a tbsp Pesto could add more for stronger taste
- a little Butter or Sunflower Oil
Briefly pulse your spinach and pesto together, or finely chop the spinach.
Combine the cream cheese, spinach, pesto. Spread on to two of the pieces of bread - about a cm thick. Place the other piece on top.
Add half of your butter to the pan over a medium/low heat and add the sandwiches.
After about 2/3 minutes flip them over and repeat (adding the rest of the butter, or oil). Lower the heat if they brown too much.
