A quick crowd-pleasing lunch with some hidden spinach

Ingredients
  

  • 4 slices Bread
  • a handful Spinach Leaves washed
  • a large dollop Cream Cheese
  • a tbsp Pesto could add more for stronger taste
  • a little Butter or Sunflower Oil

Instructions
 

  • Briefly pulse your spinach and pesto together, or finely chop the spinach. 
  • Combine the cream cheese, spinach, pesto. Spread on to two of the pieces of bread - about a cm thick. Place the other piece on top. 
  • Add half of your butter to the pan over a medium/low heat and add the sandwiches. 
  • After about 2/3 minutes flip them over and repeat (adding the rest of the butter, or oil). Lower the heat if they brown too much.
