As a child this was definitely my favourite sandwich filler. It's a great way to use up leftover chicken, and the avocado and hummus blend to make such a creamy sauce for it.

Ingredients
  

  • 400 g Cooked Chicken
  • an Avocado
  • 3 tbsp Hummus or mayonnaise
  • half a Red Onion diced
  • a tsp Lemon Juice

Instructions
 

  • Either shred or finely chop your chicken meat and add to a bowl.
  • Mash together your ripe avocado and hummus (or mayonnaise) and stir into the chicken.
  • Finely chop your red onion and stir that in to, along with your lemon juice.
  • Season to taste and enjoy. Great in sandwiches but also as a salad topper.
