These are a great way to use up any fruit at the end of the week, and, for me, these are the three fruits I mostoften have left. You could easily use pears instead of the apples, and any other berries instead of the raspberries.

Ingredients
  

  • 140 g Butter
  • 120 g Coconut or Caster Sugar
  • 2 Eggs
  • 140 g Self Raising Flour I like to use wholemeal or brown
  • a tsp Baking Powder
  • 2 Bananas mashed
  • a cup Raspberries
  • 2 Apples finely sliced, I like to leave the peel on

Instructions
 

  • In a bowl beat together your butter and sugar, and then mix in your eggs.
  • Add in your flour and baking powder and stir.
  • Stir in your mashed banana, sliced apple and raspberries.
  • Pour into a lined baking dish and bake in a preheated oven at 180C for 50 minutes. You want a knife to come out clean from the middle.
  • Allow to cool, slice and enjoy!

Notes

I like to add a tbsp of flax or chia seeds to mine!
