A great way to introduce, or sneak in, some broccoli and spinach. These are so yummy and perfect for snacks, finger food or as part of a meal. We served these ones with chicken meatballs and some sweet corn!
Servings 10 patties

Ingredients
  

  • 2 Eggs
  • 4 tbsp Spelt Flour or Plain Flour
  • a tsp Baking Powder
  • 2 tbsp Pesto
  • a handful Spinach finely chopped
  • 3 florets Broccoli finely chopped
  • half cup Grated Cheese
  • a splash Olive Oil to fry in

Instructions
 

  • Finely chop your spinach and broccoli, as small as you can get it to go. I spent a minute or two chopping each.
  • In a bowl combine your flour, eggs and pesto.
  • Add in your grated cheese, broccoli and spinach. If the mixture is too thick you could add a splash of milk.
  • Heat your frying pan with some olive oil over a low heat.
  • Add in a tbsp of your mix and fry for 2-3 minutes on each side. It should be begging to brown - as you would pancakes!
  • Repeat for the rest of the mixture and enjoy!
