A fun twist on firm favourite dish. These are so quick to make and great for summer picnics - we took these ones to the park with us. You could also so easily switch up the toppings, or use gluten free bread or dairy free cheese!
Servings 4 toasts

Ingredients
  

  • 4 slices Bread
  • 4 tbsp Tomato Purée or Pasata or Tomato pasta sauce
  • a cup Grated Cheese
  • 4 tbsp Sweetcorn
  • half a Sweet Pepper finely sliced
  • a tsp Fajita Spice or a tsp Cumin and Ground Corianda

Optional extras

  • Sliced Chicken
  • Sliced Mushrooms
  • Sliced Onions

Instructions
 

  • Toast your slices of bread.
  • Spread your tomato sauce over each one.
  • Top with some cheese.
  • Add on any toppings, sweetcorn, peppers, chicken etc..
  • Sprinkle over your fajita spice mix. Or a mix of ground cumin, ground coriander and paprika. You could also skip this step for a milder finish.
  • Place these on a tray in your oven at 200C for 10 minutes. Keep an eye on these so that they don't burn. You could grill for a more crispy finish. Enjoy!
