These are super quick and easy to make, and perfect for last minute snack or pudding options. They're also great as a weaning option!

Ingredients
  

  • a medium Banana mashed
  • 2 Eggs whisked
  • a tsp Baking Powder
  • 1/4 cup Spelt Flour or plain flour
  • 1/2 tsp Vanilla Essence optional
  • 1/2 tbsp Chia Seeds optional

Instructions
 

  • Combine all your ingredients in a bowl with a whisk until smooth.
  • Add a tsp of coconut oil to a frying pan over a medium heat.
  • Place a tbsp of the mixture into the pan and cook for about 2 minutes on each side. They should be turning golden as you turn.
  • Repeat with your remaining mix. For bigger crepes you can use a little more of the mixture each time.
