Make sure you've squeezed all the excess liquid out of your grated courgette frist.
In a bowl, mix together all your ingredients until combined.
Warm your oil in a frying pan over a medium heat.
Gently place a tbsp full of the mixture in the pan, cook for 2 minutes and turn for another 2 minutes. Repeat with the remaining mix. Depending on the size of your pan, you can do a few at a time.
If they begin to burn, lower your heat. They should be a nice golden colour. Allow to cool and enjoy!
