Servings 8 Bites

Ingredients
  

  • 1/2 Cup Courgette grated and squeezed all the juice out
  • 1/4 Cup Grated Cheddar
  • 1/4 Spelt Flour or plain wholemeal
  • 1/2 tsp Baking Powder
  • 1/2 tsp Mild Curry Powder
  • an Egg
  • a tsp Coconut Oil/Olive Oil to cook with

Instructions
 

  • Make sure you've squeezed all the excess liquid out of your grated courgette frist.
  • In a bowl, mix together all your ingredients until combined.
  • Warm your oil in a frying pan over a medium heat.
  • Gently place a tbsp full of the mixture in the pan, cook for 2 minutes and turn for another 2 minutes. Repeat with the remaining mix. Depending on the size of your pan, you can do a few at a time.
  • If they begin to burn, lower your heat. They should be a nice golden colour. Allow to cool and enjoy!
